What GI Measures
Speed And Size Of Blood Sugar Rise
The glycemic index (GI) ranks carbohydrate-containing foods on a scale of 0-100 based on how quickly and how much they raise blood glucose compared to a reference (pure glucose, set at 100).
High-GI Foods
Fast Digestion, Fast Spike
High-GI foods (GI 70+) are digested and absorbed quickly, causing a rapid rise in blood glucose followed by a corresponding rise in insulin and, often, a subsequent crash.
White bread, white rice, and sugary breakfast cereal are high-GI.
Low-GI Foods
Slow Digestion, Steady Release
Low-GI foods (GI 55 or below) are digested more slowly, producing a gentler, more gradual rise in blood glucose and steadier energy levels over time.
Most legumes, non-starchy vegetables, and whole oats are low-GI.
What Shifts A Food's GI
It's Not Fixed By Carb Content Alone
A food's GI isn't fixed by its carbohydrate content alone — fiber content, the presence of fat or protein in the same meal, ripeness (for fruit), and cooking method can all shift a food's effective glycemic impact, which is part of why GI values can vary between sources and why meal composition matters, not just individual food choice.

A newly diagnosed type 2 diabetes patient asks why white rice and lentils affect their blood sugar readings so differently, despite similar carbohydrate counts.
Checking the labels
Both foods list similar total carbohydrate grams per serving.

The nurse explains that white rice has a high glycemic index, being digested and absorbed quickly, while lentils have a low glycemic index due to their fiber and protein content slowing digestion.
Connecting to readings
This explains why the patient's post-meal blood sugar spikes much higher after white rice than after an equivalent carbohydrate amount of lentils.
Practical adjustment
