What Trans Fat Is
Artificially Hydrogenated Oil
Trans fats form when liquid vegetable oil is artificially hydrogenated — hydrogen atoms are added to make the oil more solid and shelf-stable. This process straightens out the naturally kinked unsaturated fat chains, giving trans fat some structural properties similar to saturated fat.
Older-style stick margarine, and many packaged baked goods and fried foods, historically relied on partially hydrogenated oils.
